Herbed Baked Leg of Lamb.

This traditional recipe comes from the United Methodist Women’s “Heavenly Recipes” cookbook – perfect for a family get-together.

Herbed Baked Leg of Lamb

4 to 5 lb leg of lamb

1/2 t. cayenne pepper

1 garlic knot, peeled

1 t. ground coriander

2 T. rosemary

2 T. thyme

1/4 cup virgin olive oil

1 T. pepper

1 bay leaf

2 t. dry mustard

Combine cayenne pepper, garlic, coriander, rosemary, thyme, olive oil, pepper, bay leaf, and mustard.  Blend or process into a paste; rub paste over the boned and butterflied leg of lamb.  Cover and marinate in refrigerator overnight.

Preheat oven to 350 degrees.  Bake for 2 hours.
