Seven Layer Casserole – From Gail Blythe
1 cup raw rice (not instant)
1 can whole kernel corn, drained
1/2 cup chopped onion
1/3 cup chopped green pepper
1 lb. lean ground beef
2 8 ounce cans tomato sauce
3/4 cup water (divided use)
Salt & pepper
4-5 strips of bacon
Wash and drain rice. Layer as follows in 3 quart casserole dish: uncooked rice; cover with drained corn. Sprinkle with salt and pepper. Pour 1 can of tomato sauce and 1/2 cup water over corn and rice. Add onions, green pepper, and ground beef. Sprinkle with salt and pepper. Pour the second can of tomato sauce and 1/4 cup water over all ingredients. Cut up bacon strips and spread over all. Cover and bake in a 350 degree oven for 1 hour. Uncover and bake for an additional 30 minutes or until the bacon is crisp.
